Cereals, by Ceres, Ceres, the Roman goddess of the harvest and the fields, is a term used to refer to certain agricultural products of food interest. It is not a term botanist, so do not correspond to the Poaceae or Gramineae, as many believe, but literary and historical shows all the herbaceous plants that produce fruit which, minced, flour damage to make bread and other foods therefore, includes all plants whose fruits or seeds rich in starch are used by humans to obtain polenta, soups, breads, pasta to be cooked, and other starch products.

Not being a seed, the potato tuber, while rich in starch, is not a cereal, and not only wheat and rice, but also buckwheat, quinoa and amaranth are cereals. In a strict sense, therefore, does not exist the pseudo-cereals. For developed countries , although it is not comparable to that of countries in the developing world, the consumption of cereals in the diets of all is present in substantial quantities.

The widespread production is justified by the ease of cultivation despite the environmental conditions often prohibitive for many other crops. Rich in starch are characterized by the high digestibility and ease of preservation, also as flour , contributes to a more wide spread.
